How long to smoke ribs on a pellet grill
Ribs are a fixed window with a small weight term, not a brisket-style hours-per-pound rule. Plan baby backs versus spares, then check pellets and hopper.
Forum posts still quote "one hour per pound" for ribs. That is the wrong shape. In the calculator, spare ribs start at 5.5 hours plus 0.12 hours per pound. Baby backs start at 4.5 hours plus 0.1 hours per pound. Both scale by set point the same way other proteins do. Startup is a flat 0.35 lb. Probe and feel decide done. Baby backs versus spare ribs at 225 F
Mild weather, generic 0.85 lb/hr seed, 18 lb hopper. Weight barely moves the clock.
- 2 lb baby backs at 225 F: about 4 hours 42 minutes, 4.3 lb of pellets.
- 3 lb baby backs at 225 F: about 4 hours 48 minutes, 4.4 lb.
- 3 lb spare ribs at 225 F: about 5 hours 52 minutes, 5.3 lb.
- 4 lb spare ribs at 225 F: about 5 hours 59 minutes, 5.4 lb.
Going from 2 lb to 4 lb baby backs adds about 12 minutes in this model. Spares sit about an hour longer than baby backs at the same weight. That is a fixed window with a small slope, not brisket math. How long to smoke brisket is the hours-per-pound cousin if you are comparing proteins.
250 F shortens the window a little
Burn rises to about 0.96 lb/hr on the generic seed. Hours fall. Pellets stay in the same neighborhood.
- 3 lb baby backs at 250 F: about 4 hours 23 minutes, 4.6 lb.
- 3 lb spare ribs at 250 F: about 5 hours 21 minutes, 5.5 lb.
- 4 lb spare ribs at 250 F: about 5 hours 28 minutes, 5.6 lb.
On an 18 lb hopper these cooks finish with a wide cushion. The refill drama that shows up on overnight packers rarely shows up on a single rack afternoon. Pellets per hour still matters if you stack cooks or leave the grill hot between racks.
Hopper and grill seed still matter for the bag
Ribs are short enough that most listed hoppers cover them easily. Burn seed still moves the pellet line. Compare models in the grill database, then open the same rib inputs with a grill selected if you want the assumed lb/hr for your steel.
Cold weather is the exception that surprises people on short cooks too. Ambient multiplies burn, not the rib window. Cold-weather burn explains why a 225 F set point in January still eats more pellets than June.
Beef ribs, 3-2-1 talk, and what this page is not
Beef plate ribs are a different protein line: closer to a per-pound collagen cook, often planned around 250 F. Do not reuse the baby-back fixed window for those. Sauce timing, wrap rituals, and "3-2-1" cards are recipe talk. This page is hours and pellets.
