How many pounds of pellets your cook actually needs

"How many pounds of pellets to smoke a brisket" is not a bag-size trivia question. It is hours times burn rate, plus a little startup, checked against the hopper you actually own.

A 40 lb bag lasts a long time if you are searing chicken. It does not last a long time if you light a 12 lb packer at 225 F and walk away. The listicle that says "plan on 1 to 2 pounds an hour" skips the part that matters: how many hours, at what set point, in what weather, on which barrel.

Why generic 1 to 2 lb/hr posts fail

The number is not always wrong. It is incomplete. Burn rate changes with set point. The formula on the methodology page scales burn by (target temp / 225)^1.2. So 275 F is not "the same pounds per hour, fewer hours." It is a hotter fire for a still-long cook if you keep the overnight brisket assumptions.

Ambient is the other hole. Mild weather at 225 F on the generic 0.85 lb/hr seed is under a pound an hour. Winter / sub-freezing is 2.1x that seed. Same brisket, same dial, different bag. Cold-weather burn covers why the controller cannot see that work.

Hours are the third hole. Ribs and a packer are not the same job. A per-hour slogan with no clock is how people buy one bag for an overnight and wake up to a cold fire.

A 12 lb brisket at 225 F, on paper

The default brisket profile is 1.5 hours plus 1.25 hours per pound, then scaled to the set point. A 12 lb packer at 225 F lands around 16 hours 30 minutes. On the generic 0.85 lb/hr seed in mild weather that is about 14.4 lb of pellets, including the 0.35 lb startup pad. An 18 lb hopper still gets the overnight warning because you would finish with only a few pounds left.

Change the hopper or the model and the warning changes even when the meat does not. The grill database stores listed hopper size and an assumed burn at 225 F. Those burns are labeled assumptions, not lab scores.

That is why "how many pounds for a brisket" without a grill is a half answer. The meat sets the clock. The barrel and the hopper set whether you sleep.

Bag duration is the leftover after the cook

People also ask how long a 20 lb or 40 lb bag lasts. Divide bag weight by the burn rate you are actually running, then subtract what the next cook wants. A 40 lb bag at 0.85 lb/hr is roughly 47 hours of fire in mild 225 F weather. One overnight packer can take 14 lb of that. A winter cook can take the rest. A 14 lb brisket on a Pro 575 in winter wants about 36 lb on paper. The 18 lb hopper is empty long before morning.

If the warning is already red, read empty hopper overnight.

Other proteins, same method

Pork shoulder is a long collagen cook too. Ribs and chicken are mostly a fixed window. The calculator still wants a weight because the formula has an hours-per-pound term, but those cooks do not eat a hopper the way a packer does.

Set point and the stall change the bag, not the slogan

Flip 225 to 275 on the same overnight brisket profile and hours drop, but burn rate rises faster. On the generic seed that 12 lb packer goes from about 14.4 lb to about 15.4 lb. 225 vs 275 for brisket walks through that comparison with the same weight on both links.
